Porcupine Meatball And Cabbage Bake Over Rice Recipe
This is a wonderful way to turn porcupine meatballs into a truly filling main course. It has the main ingredients as cabbage rolls, and taste like them, only prepared different!

Ingredients
  • 3/4 lb hamburger
  • 1 egg long grain rice ( about 1/2 3/4 c. )
  • 1/2 c. dry bread crumbs
  • 1 green pepper chopped
  • 1 onion chopped
  • 2 garlic cloves chopped
  • salt & pepper
  • few dashes worcheshire sauce
  • 1 head cabbage
  • 8oz. tomatoe juice
  • 8 oz. canned tomaotoes diced
  • 16 0z. tomatoe sauce
  • 1/2 bag frozen peas
  • salt & pepper to taste

Directions
  1. Combine in bowl first 8 ingredients with hands.
  2. Form into balls, and bake 15 min. at 350.
  3. Place in fridge for 10 min. to firm up a bit
  4. While meatballs are in the oven, cut up cabbage into thin pieces.
  5. In large baking dish or roasting pan,combine tomatoes,cabbage. tomatoe sauce,toamtoe juice, salt & pepper.
  6. Add maetballs on op, and bake 375 for 1- 11/2 hors until cabbge is cooked tender.
  7. Add frozen peas 10 minutes before done.
  8. While meatballs and cabbage are in the oven baking, cook enough long grain white rice to serve the amount of people you are feeding, according to package directions.
  9. Serve meatballs, and cabbage over rice.
  10. Even better the next day!!
