Spinach Pasta Salad

This is a great find. I love garlic, spinach and pasta and the three together are a delight. I came accross this recipe from a pto mom and I'm so glad she shared it with me. It is a crowd favorite!
Ingredients
- 1 bag of baby spinach shopping list
- 1/2 box of prepared bow tie pasta shopping list
- 8oz mozzarella cheese shopping list
- 1 cup extra virgin olive oil shopping list
- 1 egg shopping list
- 1/2 cup red wine vinegar shopping list
- 1-2 cloves of garlic shopping list
- 3/4 cup of parmessan cheese shopping list
- salt and pepper to taste shopping list
How to make it
- salad-
- place in a large bowl:
- -one bag spinach
- -1/2 box of prepared bow tie pasta
- -8oz mozzarella cheese
- (mix all together and refrigerate)
- dressing-
- in a food processor or magic bullet:
- -1 cup oil
- -1/4 cup red wine vinegar
- -1-2 cloves of garlic
- -3/4 cup parmessan cheese
- -1 egg
- -salt and pepper
- (mix well in food processor and refrigerate dressing
- a couple hours or overnight)
- Right before serving, mix the dressing with the salad and be prepared for a pleasant suprise!
