This is a great find. I love garlic, spinach and pasta and the three together are a delight. I came accross this recipe from a pto mom and I'm so glad she shared it with me. It is a crowd favorite!

Ingredients
  • 1 bag of baby spinach
  • 1/2 box of prepared bow tie pasta
  • 8oz mozzarella cheese
  • 1 cup extra virgin olive oil
  • 1 egg
  • 1/2 cup red wine vinegar
  • 1-2 cloves of garlic
  • 3/4 cup of parmessan cheese
  • salt and pepper to taste

Directions
  1. salad-
  2. place in a large bowl:
  3. -one bag spinach
  4. -1/2 box of prepared bow tie pasta
  5. -8oz mozzarella cheese
  6. (mix all together and refrigerate)
  7. dressing-
  8. in a food processor or magic bullet:
  9. -1 cup oil
  10. -1/4 cup red wine vinegar
  11. -1-2 cloves of garlic
  12. -3/4 cup parmessan cheese
  13. -1 egg
  14. -salt and pepper
  15. (mix well in food processor and refrigerate dressing
  16. a couple hours or overnight)
  17. Right before serving, mix the dressing with the salad and be prepared for a pleasant suprise!
