An easy to throw together recipe. The whole family will enjoy this.

Ingredients
  • 3 cups chicken cooked and deboned
  • (Tyson's fajita chicken works well when you are short on time)
  • 1 family bag (cheese) Doritos
  • 2 cans cream of chicken or mushroom soup
  • 1-2 cans of Rotel (tomatoes and peppers)
  • 2 cups cheddar cheese
  • Black olives sliced (optional)

Directions
  1. Cook and de-bone chicken.
  2. Set aside.
  3. In a 13x9 baking pan, pour doritos in the bottom. (Aprox 2/3)
  4. With the palm of your hand, break chips up.
  5. In a bowl combine the soup and rotel, stir well.
  6. Top the chips with chicken and soup mixture. Stir together.
  7. (If you do not stir the chips with the soup mixture you risk burning the chips)
  8. Bake in the oven at 375 for aprox 30-40 min.
  9. Top with cheese the last 5 min of baking. (add olives if desired)
