Ingredients
  • 125 g margarine or butter
  • 4 lemons, rind (zest finely grated) and juiced
  • 300 ml sugar
  • 25 ml cornflour
  • 3 large eggs, beaten

Directions
  1. In a deep microwave dish, melt the butter on 100% power for about 1 minute.
  2. Mix together the sugar and cornflour and add to the butter mixture.
  3. Strain in the eggs and lemon juice. Add rind (zest)
  4. Microwave uncovered for about 5-10 minutes stirring every minute or so or until the mixture is nice and thick,
  5. Pour into a clean bottle and store in the fridge when it is cool.

I am lemmon nut and use lemon curd in so many recipes, this is the first recipe I have come accross...thanks for posting!


Love lemon curd on toast with tea in the morning..also love Anchovette. A South African friend of mine turned me on to that. I love ANCHOVETTE!!
