How to make it

  • Trim excess fat from beef
  • Cut beef with grain into 1" wide strips that are 1/4" thick
  • Mix broth, cornstarch, fish sauce, vinegar, and brown sugar
  • Heat large skillet or wok over high
  • Add 1 tbsp oil and rotate to coat sides
  • Add beef, ginger and garlic (you may want to mix the ginger with 2 tsp of water first)
  • Stir fry about 3 minutes or until beef is cooked
  • Remove beef & set aside
  • Add remaining oil & heat
  • Add vegetables and stir fry about 5 minutes or until tender
  • Stir in beef, lemon peel, & heat to boiling
  • Stir in broth mixture and cook about 2 minutes or until heated through
  • Serve hot over rice w/ peanuts

    This was great--made it in less than 25 minutes--used fresh veggies, added tsp. green curry to sauce, and peanut oil with olive oil mix to fry. I also used more garlic/fresh ginger to fry veggies. My 3 yr. old even loved it!!!!! Thank you for a fresh, easy Thai recipe. This will become a regular.
