Thai Beef Stir Fry

- 1 lbs beef shopping list
- 1/2 cup beef broth shopping list
- 1 tbsp cornstarch shopping list
- 2 tbsp fish sauce shopping list
- 1 tbsp white vinegar shopping list
- 2 tbsp packed brown sugar shopping list
- 2 tbsp vegetable oil shopping list
- 1/2 tsp ground ginger shopping list
- 2 cloves garlic shopping list
- 1 tbsp grated lemon zest shopping list
- 1 bag frozen stir fry vegetables shopping list
- 1 cup peanuts shopping list
How to make it
- Trim excess fat from beef
- Cut beef with grain into 1" wide strips that are 1/4" thick
- Mix broth, cornstarch, fish sauce, vinegar, and brown sugar
- Heat large skillet or wok over high
- Add 1 tbsp oil and rotate to coat sides
- Add beef, ginger and garlic (you may want to mix the ginger with 2 tsp of water first)
- Stir fry about 3 minutes or until beef is cooked
- Remove beef & set aside
- Add remaining oil & heat
- Add vegetables and stir fry about 5 minutes or until tender
- Stir in beef, lemon peel, & heat to boiling
- Stir in broth mixture and cook about 2 minutes or until heated through
- Serve hot over rice w/ peanuts
