Thai Beef Stir Fry Recipe

Ingredients
  • 1 lbs beef
  • 1/2 cup beef broth
  • 1 tbsp cornstarch
  • 2 tbsp fish sauce
  • 1 tbsp white vinegar
  • 2 tbsp packed brown sugar
  • 2 tbsp vegetable oil
  • 1/2 tsp ground ginger
  • 2 cloves garlic
  • 1 tbsp grated lemon zest
  • 1 bag frozen stir fry vegetables
  • 1 cup peanuts

Directions
  1. Trim excess fat from beef
  2. Cut beef with grain into 1" wide strips that are 1/4" thick
  3. Mix broth, cornstarch, fish sauce, vinegar, and brown sugar
  4. Heat large skillet or wok over high
  5. Add 1 tbsp oil and rotate to coat sides
  6. Add beef, ginger and garlic (you may want to mix the ginger with 2 tsp of water first)
  7. Stir fry about 3 minutes or until beef is cooked
  8. Remove beef & set aside
  9. Add remaining oil & heat
  10. Add vegetables and stir fry about 5 minutes or until tender
  11. Stir in beef, lemon peel, & heat to boiling
  12. Stir in broth mixture and cook about 2 minutes or until heated through
  13. Serve hot over rice w/ peanuts
