Cambodian Chicken Stir Fry

- 2 large chicken breasts - cubed shopping list
- 1/2 cup minced fresh ginger (or 1 tbsp ground ginger) shopping list
- 1 cup water shopping list
- 2 tbsp oil shopping list
- 2 tbsp sugar shopping list
- 2 tbsp fish sauce shopping list
- 2 cloves garlic - minced shopping list
- 1/2 tsp paprika shopping list
- salt & pepper to taste shopping list
- 1 bag frozen stir fry vegetables shopping list
- 1 tbsp cornstarch dissolved in 2 tbsp hot water shopping list
How to make it
- Add oil, garlic, ginger, sugar, and chicken to large skillet or wok.
- Stir fry over high heat until meat begins to brown
- Add fish sauce, salt, paprika and water
- Continue cooking until the meat is done
- Add vegetables & stir fry until tender
- Remove from heat and add pepper
- You may add cornstarch if the sauce is too runny
- Serve hot over rice with soy sauce or hot sauce
