Cambodian Chicken Stir Fry Recipe
This is my humble attempt at Cambodian food. It turned out well, so I would like to share it with you. Enjoy!

Ingredients
  • 2 large chicken breasts - cubed
  • 1/2 cup minced fresh ginger (or 1 tbsp ground ginger)
  • 1 cup water
  • 2 tbsp oil
  • 2 tbsp sugar
  • 2 tbsp fish sauce
  • 2 cloves garlic - minced
  • 1/2 tsp paprika
  • salt & pepper to taste
  • 1 bag frozen stir fry vegetables
  • 1 tbsp cornstarch dissolved in 2 tbsp hot water

Directions
  1. Add oil, garlic, ginger, sugar, and chicken to large skillet or wok.
  2. Stir fry over high heat until meat begins to brown
  3. Add fish sauce, salt, paprika and water
  4. Continue cooking until the meat is done
  5. Add vegetables & stir fry until tender
  6. Remove from heat and add pepper
  7. You may add cornstarch if the sauce is too runny
  8. Serve hot over rice with soy sauce or hot sauce
