How to make it

  • Fry bacon until very crispy. Drain bacon on paper towels then crumble. Reserve 1/2 cup of bacon drippings.
  • Combine potatoes, bacon, onion in a bowl.
  • Combine bacon drippings, eggs, salt, pepper, sugar, vinegar and blend well. I use a deep narrow bowl and an immersion blender. Pour dressing over potatoes and refrigerate overnight. Tossing/stirring occasionally.
