Simple sweet-tart vegetable salad.

Ingredients
  • 2 1/2 tablespoons balsamic or red wine vinegar
  • 2 tablespoons orange juice
  • 1 tablespoon poppy seeds
  • 1 teaspoon sugar
  • 1/2 teaspoon dry mustard
  • 1/4 teaspoon salt
  • 1/2 cup vegetable oil
  • 2 scallions, minced
  • 8 medium zucchini, halved lengthwise, thinly sliced crosswise

Directions
  1. Whisk first 6 ingredients in a small bowl. Gradually whisk in oil.
  2. Mix in scallions. (Dressing can be prepared up to 1 day early.)
  3. Put zucchini slices in a large bowl and toss with enough dressing to coat.
