Root Beer Float Cream Cake Recipe
This is a great light dessert for summer. A scoop of frozen vanilla yogurt or ice cream is a great "garnish" to the cake! :)

  • 1 pkg. white cake mix
  • 1&3/4c. cold root beer; divided
  • 1/4c. vegetable oil
  • 2 eggs
  • 1 envelope whipped topping mix

Directions
  1. FOR CAKE:
  2. Combine cake mix, 1&1/4c. of the root beer, oil & eggs.
  3. Beat on low speed for 2 min.
  4. Pour batter into prepared 13x9" pan.
  5. Bake @ 350F for 30-35 min.
  6. Cool completely.
  7. FOR TOPPING:
  8. Combine whipped topping mix & remaining root beer.
  9. Beat until soft peaks form.
  10. Frost cake.
  11. Store remaining cake in the refrigerator.

I tried this for company the other night, and while it was an overall good cake, I was disappointed in the weakness of the root beer flavor. The cake itself was moist, and had a tinge of coloring towards rootbeer, but the rootbeer flavor wasn't there. For the whipped cream I went with real heavy whipping cream, added about a cup of rootbeer and about a half cup of sugar. That had more rootbeer flavor then the cake.
