ONION PATTIES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Pillar Estate in Mesquite Texas in 1991.

Ingredients
  • 3/4 cup flour
  • 2 teaspoons baking powder
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon salt
  • 1 tablespoon corn meal
  • 1/2 cup powdered milk
  • Cold water
  • 2-1/2 cups finely chopped onions
  • Oil for frying

Directions
  1. Mix together flour, baking powder, sugar, salt, cornmeal and milk.
  2. Stir in enough cold water to form thick batter.
  3. Mix in onions then drop by teaspoonfuls into deep fat.
  4. Flatten patties slightly as you turn them then fry to a golden brown.
