Peach Meringues-Anna Clark

- 6 canned cling peach halves, well drained shopping list
- 1/4 cup of crushed vanilla wafers or lady fingers shopping list
- 2 tsp of peach syrup (I would substitute a splash vanilla syrup instead of the canned peach syrup) shopping list
- 1/4 tsp of cinnamon shopping list
- 2 egg whites shopping list
- 1/4 cup granulated sugar shopping list
- 1/4 tsp of almond extract shopping list
How to make it
- Preheat oven to 450 degrees.
- In a shallow baking dish, arrange the peaches, hollow side up.
- Crush vanilla wafers with hands, fill centers of peaches with crumbs.
- Sprinkle first with flavored syrup (or maybe hazelnut liquor?)
- then sprinkle with cinnamon.
- Beat egg whites until soft peaks form, gradually beat in sugar, beating well until meringue is stiff, fold in almond extract.
- top each peach half with this meringue.
- Then bake them until the tops are golden brown, about five minutes. Watch carefully.
