How to make it

  • Preheat oven to 450 degrees.
  • In a shallow baking dish, arrange the peaches, hollow side up.
  • Crush vanilla wafers with hands, fill centers of peaches with crumbs.
  • Sprinkle first with flavored syrup (or maybe hazelnut liquor?)
  • then sprinkle with cinnamon.
  • Beat egg whites until soft peaks form, gradually beat in sugar, beating well until meringue is stiff, fold in almond extract.
  • top each peach half with this meringue.
  • Then bake them until the tops are golden brown, about five minutes. Watch carefully.
