Spicy Thai Rice Recipe

Ingredients
  • 2c. water
  • 1c. uncooked long grain white rice
  • 1/4c. chopped green onions
  • 2 fresh red chilies; seeded & chopped
  • 1T. snipped cilantro
  • 1T. butter
  • 1t. fresh ginger; minced
  • 3/4t. salt
  • 1/8t. ground tumeric
  • 1 to 2t. lime juice
  • chopped roasted peanuts & red pepper flakes: optional garnish

Directions
  1. Combine 1st 9 ingredients in 2 to 3 qt. saucepan.
  2. Bring to a boil; stirring once or twice.
  3. Reduce heat; cover & simmer 15 min. or until rice is tender & liquid is absorbed.
  4. Stir in lime juice & fluff with a fork.
  5. Garnish with peanuts & red pepper flakes.

You can also try mixing in a cup or so of toasted coconut along with more cilantro - it's delicious!
