Ingredients
  • Oil for frying
  • 2 cups all purpose flour, plus 1 cup for dredging
  • 1 tsp salt, plus more for seasoning
  • 1/2 tsp ground black pepper, plus more for seasoning
  • 2 cups Newcastle Brown Ale (about 1 1/2 bottles--drink the rest!)
  • 3 eggs
  • 3 pounds of fish, I used Walleye, but any favorite will do

Directions
  1. Preheat deep fryer to 300 degrees F.
  2. Mix 2 cups flour with 1 tsp salt, 1/2 black pepper, beer and eggs. Mix well. Batter will be kinda runny.
  3. Season fish with salt and pepper. You may add other seasonings to kick it up if you like.
  4. Dredge fish in the additional flour, tap off the excess.
  5. Dip fish in the batter, coat well.
  6. Fry in batches until golden brown.
  7. Drain fried fish on plate lined in paper towels.
  8. Transfer to a baking sheet and keep warm in the oven.
