Mexican Cornbread Recipe
This dish is quick and comforting. Great topped with salsa and/or sour cream and nice crisp salad on the side. Mock Margarita's for the little kids and Beer Margarita's for the BIG kids.

Ingredients
  • 1 lb ground beef
  • 1 med white onion
  • 2 pkgs mexican flavored cornbread mix
  • 1 & 1/2 cups milk
  • 2 eggs
  • 1 can cream style corn
  • 1 & 1/2 cups shredded cheddar cheese
  • Jalapeno Peppers (pickled) - optional
  • Brown ground beef and onions until nicely browned. Prepare cornbread mix with eggs & milk. Add creamed corn to mixture. Mix well. Pour 1/2 of the cornbread mixture in the bottom of a 9 X 13 pan. Layer the cooked ground beef/onion mixture on top of the cornbread mix. Sprinkled cheddar cheese on top of beef, add jalapenos at this point. Pour remaining cornbread mixture on top.
  • Bake in a preheated 375 d. oven for approx. 60 minutes.
  • Top with salsa/sour cream..if desired. Enjoy.
