Mexican Cornbread Recipe

Ingredients

1 lb ground beef

1 med white onion

2 pkgs mexican flavored cornbread mix

1 & 1/2 cups milk

2 eggs

1 can cream style corn

1 & 1/2 cups shredded cheddar cheese

Jalapeno Peppers (pickled) - optional

Brown ground beef and onions until nicely browned. Prepare cornbread mix with eggs & milk. Add creamed corn to mixture. Mix well. Pour 1/2 of the cornbread mixture in the bottom of a 9 X 13 pan. Layer the cooked ground beef/onion mixture on top of the cornbread mix. Sprinkled cheddar cheese on top of beef, add jalapenos at this point. Pour remaining cornbread mixture on top.

Bake in a preheated 375 d. oven for approx. 60 minutes.

Top with salsa/sour cream..if desired. Enjoy.
