Chocolate Chip Zucchini Muffins or Bread

- 3 eggs shopping list
- 1 cup vegetable oil shopping list
- 2 cups sugar shopping list
- 2 teas. vanilla shopping list
- 2 cups shredded zucchini shopping list
- 1 (8 1/4-ounce) can crushed pineapple, well drained shopping list
- 3 cups all-purpose flour shopping list
- 2 teas. baking soda shopping list
- 1/4 teas. baking powder shopping list
- 1 teas. salt shopping list
- 1 1/2 teas. cinnamon shopping list
- 3/4 teas. ground nutmeg shopping list
- 1 cup semi-sweet chocolate morsels shopping list
- 1 cup chopped walnuts shopping list
How to make it
- Combine eggs, oil, sugar and vanilla; beat until smooth and thickened.
- Stir in zucchini, pineapple, flour baking soda, baking powder, salt and spices.
- Fold in chocolate chips and nuts.
- Spread batter in 2 greased 9x5x3" loafpans or in muffin pans, filling cups about 1/2 full.
- Bake loaves at 350 degrees for 1 hour or until wooden pick comes out clean; bake muffins at 350 degrees for 20 to 30 minutes.
- Makes 2 loaves or 3 doz. muffins

Oh my gosh, my aunt made zucchini bread for a family reunion, one year and it was delicious. Maybe this recipe will taste like hers.
