How to make it

  • Combine eggs, oil, sugar and vanilla; beat until smooth and thickened.
  • Stir in zucchini, pineapple, flour baking soda, baking powder, salt and spices.
  • Fold in chocolate chips and nuts.
  • Spread batter in 2 greased 9x5x3" loafpans or in muffin pans, filling cups about 1/2 full.
  • Bake loaves at 350 degrees for 1 hour or until wooden pick comes out clean; bake muffins at 350 degrees for 20 to 30 minutes.
  • Makes 2 loaves or 3 doz. muffins

    You will love it, my sister-in-law came up with the recipe because she grew tons of zucchini and it has become a family favorite. In fact, I have friends that beg me to make it for them.
