APRICOT CHICKEN SALAD I obtained this recipe from an estate sale when I purchased the family collection from the Rush Estate in Irving, Texas in 1992.

Ingredients
  • 1/2 cup plain yogurt
  • 1/4 cup mayonnaise
  • 3 tablespoons apricot preserves
  • 2 teaspoons grated fresh gingerroot
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 3 cups cooked chicken
  • 1 cup sliced almonds toasted
  • 6 ounce package dried apricots chopped
  • 3/4 cup sliced celery
  • Lettuce leaves

Directions
  1. Whisk together yogurt, mayonnaise, apricot preserves, gingerroot, salt and pepper.
  2. Add chicken, almonds, apricots and celery then chill and serve on lettuce leaves.
