Tuscan Peas Recipe
These are a take on Mario Batalli's recipe. I love peas!! These are wonderful and can be served as a side with any meat. I like them with meatloaf and mashed potatoes.

Ingredients
  • 4 tablespoons extra-virgin olive oil
  • 1 onion, cut into a fine dice
  • 1 clove garlic, minced
  • 1 tablespoons granulated sugar
  • 1 teaspoon chili flakes
  • 1 tablespoon tomato paste (can use paste in a tube)
  • 2 cups fresh green peas (can substitute frozen)
  • Salt

Directions
  1. In a large saute pan heat the oil.
  2. Add the onion and garlic. Cook until translucent, about 6 to 8 minutes.
  3. Add the sugar, chili flakes and tomato paste and cook until rusty looking 4 to 5 minutes.
  4. Add the peas and cook until very tender, 8 to 10 minutes.
  5. Season with salt.
