Ingredients
  • 6 cups water
  • 1/2 tsp. salt
  • 1 1/4 cups tapioca (small pearl)
  • 2 cups brown sugar
  • 2 eggs
  • 1/2 cup evaporated milk (she calls for milnot, but I couldn't find it in my grocery store)
  • 1/2 cup white sugar
  • 1/2 stick butter, browned
  • 2 tsp. vanilla
  • 8 oz. non dairy whipped topping
  • 3 Snicker bars, chopped
  • Bananas (optional) I used one chopped

Directions
  1. Bring water and salt to a boil, add tapioca and reduce heat, cook until almost clear. Stir often. remove from heat.
  2. Add brown sugar, cover and let set for approx. 10 minutes.
  3. Beat the eggs, evaporated milk and sugar and add to tapioca. Put back on heat and bring to a boil. By this time the tapioca should be clear. Remove from heat again.
  4. Brown the butter and add to hot tapioca, stir in vanilla, cool.
  5. When pudding is cold fold in the whipped topping as well as the Snicker bars and bananas.

This sounds good! Reminds me of when my friend was going to make tapioca - and she couldn't figure out what the "egg white" was...... guess what?! She put the SHELL in the mixture and couldn't figure out why it didn't turn out right! LOL
