The Best Vegetarian Chili In The World

- 1 Tbsp oilve oil shopping list
- 1/2 med onion, chopped shopping list
- 2 bay leaves shopping list
- 1 tsp cumin shopping list
- 2 Tbsp dried oregano shopping list
- 1 Tbsp salt shopping list
- 2 stalks celery, chopped shopping list
- 2 green peppers, chopped shopping list
- 2 jalapeno pepper, chopped (optional) shopping list
- 3 cloves garlic shopping list
- 2 (4oz) cans chopped green chilis, drained shopping list
- 2 vegetarian burger patties, crumbled shopping list
- 3 (28 oz) cans diced tomatoes (drained) shopping list
- 1/4 C chili powder shopping list
- 1Tbsp ground black pepper shopping list
- 1 (15oz) can red kidney beans, rinsed and drained shopping list
- 1 (15 oz) can garbanzo beans (chickpeas), rinsed and drained shopping list
- 1 (15oz) can black beans, rinsed and drained shopping list
- 1 (15 oz) can whole kernal corn shopping list
How to make it
- Heat oil in a very large pot over medium heat. Stir in onion; season with bay leaves, cumin, oregano, and salt. Cook and stir until onion is tender. Mix in celery, green peppers, jalapenos, garlic, and green chilis. When vegetables are heated through, mix in vwegetarian burger patties. Reduce heat to low, cover pot, and simmer 5 mins.
- Mix the tomatos into the pot. Season with chili powder and pepper. Stir in kidney beans, garbanzo beans, and black beans. Bring to a boil, reduce heat to low, and simmer 45 minutes.
- Stir in corn, and continue cooking 5 minutes before serving. Remove bay leaves.
