Ingredients
  • POTATOES thick slices cut lengthwise (4 peeled)
  • EGGPLANT thick slices cut lengthwise (3 eggplants)
  • Enough of each to cover the bottom of one large pan or 2 layers of a tall smaller pan. Pan fry separately until soft
  • Spread a layer of potatoes in a greased pan then top with a layer of eggplant.
  • BEEF or LAMB ground or chopped. (2 pounds)
  • ONION (2)
  • GARLIC (1 clove minced)
  • PARSLEY (2tbs)
  • OREGANO (1/2 tsp)
  • CINNAMON (1/4 tsp)
  • NUTMEG (1/4 tsp)
  • Other spices like green onions, basil, lemon peel, and tarragon
  • Fry until cooked. Add wine and tomatoes to meat
  • RED WINE (1/2 cup)
  • CHOPPED TOMATOES (1 large)
  • TOMATO SAUCE (8oz can)
  • TOMATO PASTE (small can)
  • Simmer for 20 minutes
  • Pour tomato sauce over eggplant
  • Pour GRATED CHEESE (cheddar, Jack, Swiss) over tomato layer
  • White sauce (Béchamel)
  • Melt BUTTER (1 cube)
  • Stir in same amount of FLOUR (6 tbls)
  • Add HEATED MILK (4 cups)
  • WHITE PEPPER
  • NUTMEG (1/4 tsp)
  • Heat over medium heat, stirring until think
  • Pour white sauce on top to make a ½ inch topping
  • or make 2 layers (potato, eggplant, meat/tomato cheese) and add an egg to white sauce and pour a thick layer to make a custard topping
