Old fashion moussaka
serve with green beans and salad

Ingredients
- POTATOES thick slices cut lengthwise (4 peeled)
- EGGPLANT thick slices cut lengthwise (3 eggplants)
- Enough of each to cover the bottom of one large pan or 2 layers of a tall smaller pan. Pan fry separately until soft
- Spread a layer of potatoes in a greased pan then top with a layer of eggplant.
- BEEF or LAMB ground or chopped. (2 pounds)
- ONION (2)
- GARLIC (1 clove minced)
- PARSLEY (2tbs)
- OREGANO (1/2 tsp)
- CINNAMON (1/4 tsp)
- NUTMEG (1/4 tsp)
- Other spices like green onions, basil, lemon peel, and tarragon
- Fry until cooked. Add wine and tomatoes to meat
- RED WINE (1/2 cup)
- CHOPPED TOMATOES (1 large)
- TOMATO SAUCE (8oz can)
- TOMATO PASTE (small can)
- Simmer for 20 minutes
- Pour tomato sauce over eggplant
- Pour GRATED CHEESE (cheddar, Jack, Swiss) over tomato layer
- White sauce (Béchamel)
- Melt BUTTER (1 cube)
- Stir in same amount of FLOUR (6 tbls)
- Add HEATED MILK (4 cups)
- WHITE PEPPER
- NUTMEG (1/4 tsp)
- Heat over medium heat, stirring until think
- Pour white sauce on top to make a ½ inch topping
- or make 2 layers (potato, eggplant, meat/tomato cheese) and add an egg to white sauce and pour a thick layer to make a custard topping
