Chocolate Muffins A La Weight Watchers Recipe
This is a Weight Watcher recipe - but don't be fooled - it's wonderful!

Ingredients
  • 1 (15 oz. )can of 100% pumpkin
  • (DO NOT USE PUMPKIN PIE FILLING)
  • 1 box of devils food cake mix

Directions
  1. Mix the two ingredients together in a bowl. It will seem very dry, just keep mixing. You may ad a little water if necessary, but just a little.
  2. Spray muffin cups with the nonstick spray of your choice.
  3. Follow instructions for baking cup cakes on the box.

Alterations


Rather than water, you could probably add a little apple sauce to moisten the batter, but I don't add anything. I probably just burn a few calories mixing the pumpkin and cake mix! Also - applesauce would change the points for those of you counting.


You can use spice cake mix in place of the devils food cake mix for an entirely different muffin. (I prefer the chocolate!) And I suppose you could try just about ANY cake mix that tickles your fancy. Let us know which ones you try and how they are.
