Aromatic Yellow Rice

- basmati rice measured to the 450ml level on a measuring jug shopping list
- 1.2 l (2 pints) plus 600ml (1 pint) water shopping list
- 1¼ tsp salt shopping list
- ¾ teaspoon turmeric shopping list
- 3-4 cloves shopping list
- 2.5 cm (1 inch) cinnamon stick shopping list
- 3 bay leaves shopping list
- 3 tbsp unsalted butter shopping list
How to make it
- Put the rice in a bowl and wash in several changes of water. Drain. Pour 1.2 litres fresh water over the rice and let soak for 30 minutes. Drain.
- Combine the rice, 600ml water, salt, turmeric, cloves, cinnamon and bay leaves in a heavy pan and bring to the boil.
- Cover with a tight fitting lid, turn heat to very, very low and cook for 25 minutes.
- Let the pan rest covered and undisturbed for 10 minutes.
- Add the butter to the rice and serve.
- When serving remove the cloves, cinnamon and bay leaves.
