Ingredients
  • 2c. all purpose flour
  • 1/3c. sugar
  • 2t. baking powder
  • 1/2t. salt
  • 1/4c. unsalted butter
  • 1/2c. heavy whipping cream
  • 1 large egg
  • 2t. vanilla extract
  • 8oz chopped white chocolate
  • 1c. toasted sliced almonds
  • 1c. chopped dried apricots

Directions
  1. Preheat oven to 375
  2. In a bowl combine flour,salt, baking powder,and sugar
  3. Stir till well mixed
  4. Cut butter in very small cubes
  5. With pastry cutter cut butter into flour until it looks like coarse crumbs
  6. Add almonds, chocolate and apricots
  7. In another bowl combine cream, egg, and vanilla
  8. Add the cream mixture to flour mixture and knead just till combined
  9. On an ungreased cookie sheet pat out a 9in. diameter circle
  10. With a serrated knife cut into 8 wedges
  11. Bake 15 to 20 min. till lightly browned
  12. This would be delish with lemon curd and cream.
