Did you contact them directly and ask for help? I've asked some restaurants and shops over the years for recipes once we've moved from their localities and they have graciously shared. Perhaps if the winery is politely asked they might share? Let's face it, this is a compliment and you'd happily use their wine to get the flavor exactly as remembered and loved.
