Easy Chipotle Chili and Cornbread

- 2 lb. boneless chuck pot roast cooked & cubed shopping list
- ½ lb. pork loin roast cooked & cubed shopping list
- 1 whole onion chopped shopping list
- 1 pkg Carrol Shelby’s chili Kit shopping list
- 2 1lb 12oz cans Ro-Tel diced tomatoes & green chili shopping list
- 1 can Chipotle Pepperss in adobo sauce shopping list
- 1 can V8 juice shopping list
- ¾ c water shopping list
- Adjust ingredients to taste. shopping list
How to make it
- 1) In large pot saute onions and add cubed meat. Stir well.
- 2) Add Chili mix, V8 juice, Chili mix, diced tomatoes & green chili, ¾ water.
- 3) Stir well and heat through. Add chopped chipotle peppers to taste.
- 4) Simmer for 30-45 min. Thicken with masa packet if preferred.
- 5) Add chili beans last.
