Blueberry Cornmeal Pancakes With Orange Butter

- 2 cups flour shopping list
- 1 cup cornmeal shopping list
- 1/4 cup granulated sugar shopping list
- 2 teaspoons baking powder shopping list
- 1 teaspoon baking soda shopping list
- 1 teaspoon salt shopping list
- 1/4 teaspoon ground cinnamon shopping list
- 2 eggs shopping list
- 3 cups buttermilk shopping list
- 1/3 cup butter melted shopping list
- 2 cups fresh blueberries shopping list
- orange Butter: shopping list
- 3/4 cup butter softened to room temperature shopping list
- 2 tablespoons powdered sugar shopping list
- 1 tablespoon grated orange peel shopping list
- 2 tablespoons orange liqueur shopping list
- 2 tablespoons orange juice shopping list
- 1/4 teaspoon vanilla shopping list
- 1/4 teaspoon ground nutmeg shopping list
- 1/8 teaspoon salt shopping list
How to make it
- Combine flour, cornmeal, sugar, baking powder, baking soda, salt and cinnamon then set aside.
- Beat eggs then add buttermilk and 1/3 cup melted butter.
- Add egg mixture to flour mixture and stir just until moistened then fold in blueberries.
- Spoon 1/4 cup of the batter onto a greased griddle.
- Cook until both sides are light brown on the inside and crisp on the outer edges.
- Repeat with remaining butter then serve with orange butter
- To make butter combine butter, powdered sugar and grated orange peel and beat until fluffy.
- Beat in orange liqueur, orange juice, vanilla, nutmeg and salt.
