How to make it

  • Combine flour, cornmeal, sugar, baking powder, baking soda, salt and cinnamon then set aside.
  • Beat eggs then add buttermilk and 1/3 cup melted butter.
  • Add egg mixture to flour mixture and stir just until moistened then fold in blueberries.
  • Spoon 1/4 cup of the batter onto a greased griddle.
  • Cook until both sides are light brown on the inside and crisp on the outer edges.
  • Repeat with remaining butter then serve with orange butter
  • To make butter combine butter, powdered sugar and grated orange peel and beat until fluffy.
  • Beat in orange liqueur, orange juice, vanilla, nutmeg and salt.
