Tomato Bocconcini Salad

- 20-30 largish cherry tomatoes shopping list
- 20-30 balls of bocconcini cheese shopping list
- 10 medium size basil leaves shopping list
- good quality olive oil (couple tablespoons) shopping list
- Aged balsamic (or balsamic reduction) shopping list
- Fresh ground salt & pepper to taste shopping list
How to make it
- Slice tomatoes and bocconcini balls into approx. 1/8 in. slices
- Arrange in a flat dish, alternating tomato/cheese slice
- Drizzle with olive oil and balsamic
- Season with salt & pepper
- chiffonade basil leaves and sprinkle on top right before serving.

From what I have read bocconcini is similar to Mozzarella Perlini, it 's origin is Naples Italy.
I love this in the summertime when my tomatoes are nice and ripe.

This is such an easy and pretty salad, we love it in our family. I cheat though and use Mozzarella Perlini (really tiny mozzarella) along with whole grape or cherry tomatoes, and don't cut a thing, except for the basil. Great Post:o)
