How to make it

  • Melt 1/3 cup (75 ml) of butter in a skillet.
  • Add onion and cook over low heat until soft and translucent.
  • Add garlic and cook a few minutes more.
  • Remove from skillet and set aside.
  • In same skillet, stir-fry chicken livers over medium-high heat until barely pink inside.
  • Place chicken livers, onion mixture and remaining butter in food processor or blender.
  • Process until smooth.
  • Add chopped herbs and port and mix well.
  • Pack into individual ramekins or a 4-cup (1 L) serving dish.
  • Refrigerate for 1 day before serving.
  • Serves 4 - 6
