Chicken Pate With Fresh Herbs

- 1-1/2 cups (375 ml) softened butter shopping list
- 1 onion, chopped shopping list
- 1-2 garlic cloved, chopped shopping list
- 1 lb. (500 g) chicken livers, trimmed and cut shopping list
- 1 tsp. (5 ml) fresh chopped thyme shopping list
- 1 tsp. (5 ml) chives shopping list
- 1 tsp. (5 ml) marjoram shopping list
- 1 tsp. (5 ml) tarragon shopping list
- 3 Tbsp. (45 ml) port or sherry (optional) shopping list
How to make it
- Melt 1/3 cup (75 ml) of butter in a skillet.
- Add onion and cook over low heat until soft and translucent.
- Add garlic and cook a few minutes more.
- Remove from skillet and set aside.
- In same skillet, stir-fry chicken livers over medium-high heat until barely pink inside.
- Place chicken livers, onion mixture and remaining butter in food processor or blender.
- Process until smooth.
- Add chopped herbs and port and mix well.
- Pack into individual ramekins or a 4-cup (1 L) serving dish.
- Refrigerate for 1 day before serving.
- Serves 4 - 6
