How to make it

  • Hand beat cream cheese until smooth
  • Add 1T(ish) garlic, or until it smells and tastes the way you like it.
  • Line a small bowl, tin, or tupperware container with plastic wrap, leaving the ends hanging over the sides.
  • Chop the tomatoes
  • Spread a thin layer of pesto and tomatoes in the bottom of the container, using the least amount of oil possible.
  • Then add a layer of the cream cheese mixture on top.
  • Press and smooth down to add firmness.
  • Keep layering the ingredients until they are all used up, being careful to add as little oil as possible to the spread.
  • Fold in the ends of the plastic wrap, cover (optional), and refrigerate at least an hour, preferably overnight.
  • Release the spread from the mold right before serving.
  • Serve with sturdy crackers that can stand up to a cold, thick spread.
