Sundried Tomato Pesto Spread Recipe

  • 2 8oz pkgs cream cheese, softened
  • 1 small jar pesto
  • 1 small jar sundried tomatoes (in oil) OR 1 pkg (dry) sundried tomatoes, blanched for 30 secs - 1 min
  • garlic powder or minced garlic

Directions
  1. Hand beat cream cheese until smooth
  2. Add 1T(ish) garlic, or until it smells and tastes the way you like it.
  3. Line a small bowl, tin, or tupperware container with plastic wrap, leaving the ends hanging over the sides.
  4. Chop the tomatoes
  5. Spread a thin layer of pesto and tomatoes in the bottom of the container, using the least amount of oil possible.
  6. Then add a layer of the cream cheese mixture on top.
  7. Press and smooth down to add firmness.
  8. Keep layering the ingredients until they are all used up, being careful to add as little oil as possible to the spread.
  9. Fold in the ends of the plastic wrap, cover (optional), and refrigerate at least an hour, preferably overnight.
  10. Release the spread from the mold right before serving.
  11. Serve with sturdy crackers that can stand up to a cold, thick spread.
