My husband and I made this for a Jamaican dinner a while back. It was wonderful - so many different flavors! Ackee is only sold canned in the USA. You can find it at a Spanish grocery. Recipe is from Emeril, who came to my rescue yet again.

  • 1/2 lb dried salted fish, such as cod
  • 6 slices thick-cut bacon
  • 4T butter or coconut oil
  • 3 large onions, chopped
  • 1/2 tsp cayenne
  • 4 cloves garlic, minced
  • 1 green bell pepper, cut into strips
  • 2 sprigs thyme
  • 6 green onions, finely chopped
  • 1/4 hot red pepper, such as scotch bonnet, finely chopped
  • 1/4 tsp ground allspice
  • 1 (28oz) can whole tomatoes, broken with your hands
  • 2 (18oz) cans ackee, drained
  • salt and pepper

Directions
  1. In a bowl of cold water, soak fish at least 8 hours, or overnight, changing the water at least twice.
  2. Drain and transfer fish to a saucepan (discard soaking water)
  3. Cover the fish with fresh cold water by 1 inch and bring to a boil over high heat.
  4. Reduce the heat to a simmer and cook for 15 minutes.
  5. Drain and set fish aside to cool.
  6. When cool enough to handle, remove and discard any bones or skin and flake the fish into small pieces. Set aside.
  7. In a large skillet, cook the bacon over medium heat until very crispy and all the fat is rendered.
  8. Put the bacon on paper towels and set aside.
  9. Pour off most of the fat and add butter to the skillet
  10. Add onions, cayenne, garlic, bell peppers, thyme, green onions, red pepper and allspice, and cook until the vegetables are tender but not browned, about 4-6 minutes.
  11. Add tomatoes, fish, and drained ackee and cook, stirring occasionally, about 30 minutes.
  12. Season with salt and pepper to taste, and serve with white rice, or rice and beans cooked in coconut milk.
  13. Crumble the reserved bacon strips over the top of the ackee and serve.

Hi Jett, Ackee is a Jamaican fruit that looks kind of like a bright red pear that splits open when it's ripe. They say it tastes and looks like scrambled eggs, but I think it's got kind of a nutty flavor. It's so good with the salty fish, the savory bacon, and the spicy peppers.


Love Jamaica been there several time and Ackee is always on every menu LOL. Thanks for bringing back great memories.
