Ingredients
  • 1/2 cup chopped walnuts
  • 2 teaspoons cinnamon
  • 1-1/2 cups granulated sugar
  • 1/2 cup butter or margarine
  • 2 eggs, unbeaten
  • 1 teaspoon vanilla extract
  • 2 cups sifted all-purpose flour
  • 1 teaspoon double-acting baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup sour cream
  • 1 large apple or 2 medium

Directions
  1. In bowl mix walnuts, cinnamon and 1/2 cup sugar.
  2. Start heating oven to 375 degrees.
  3. In large bowl, with mixer at high speed, beat butter until creamy.
  4. Gradually add 1 cup sugar, beating until light and fluffy and scraping the bowl and beaters now and then with a rubber spatula.
  5. Add eggs one at a time, then vanilla, beating until blended.
  6. Sift flour with baking powder, baking soda and salt at low speed.
  7. Beat flour mixture into batter alternately with sour cream.
  8. Spread half of the batter in well greased 9-inch tube pan with removable bottom.
  9. Top with pared, cored thinly sliced apple; sprinkle with half of walnut mixture; top with remaining batter then rest of walnut mixture.
  10. Bake 40 minutes or until cake tester inserted in center comes out clean.
  11. Remove coffeecake from oven and let it stand in pan on wire rack 30 minutes.
  12. With metal spatula, gently loosen cake all around side.
  13. Then by top of tube, lift cake still on base from pan.
  14. Allow to cool on a wire rack.
  15. Loosen from tube and base and lift to serving plate.
  16. Serve alone or with fresh whipping cream or French Vanilla ice cream.
  17. Serves 6 - 8
