How to make it

  • Stir butter, flour and icing sugar together and press into a foil 9x13 pan.
  • Bake for 10 minutes at 350 degrees. While it's baking prepare your filling.
  • Measure all of your filling ingredients into a bowl and mix well. Pour it over the crust and continue to bake for 20-25 minutes.
  • Stir all the topping ingredients together and spread it over the raisin layer. Return to oven for 15 minutes.
  • Turn broiler on to brown the coconut. But watch very carefully as it will burn very easily!
  • Cool on wire rack.
  • Lift out of pan using foil and cut into squares.
  • Enjoy!
  • I always line my pans with foil when I make bars and brownies etc. That way when the product is cooled, you can lift it out and it's much easier to cut using a large, long bladed knife resulting in much neater squares!
