Very Creamy Smoked Salmon Quiche Recipe
VERY CREAMY SMOKED SALMON QUICHE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Billker Estate in Cleburne, Texas in 1983.

Ingredients
  • 9" piecrust
  • 8 ounces smoked sockeye salmon
  • 8 ounces shredded Swiss cheese
  • 1 cup heavy whipping cream
  • 4 eggs
  • 1/4 teaspoon granulated salt
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon ground nutmeg

Directions
  1. Preheat oven to 375.
  2. Place smoked salmon evenly over bottom of piecrust.
  3. Top salmon with cheese.
  4. In medium bowl blend whipping cream, eggs, salt, pepper and nutmeg.
  5. Pour this mixture over cheese making sure to cover all of the cheese.
  6. Bake 45 minutes until quiche is puffed and lightly browned.
