How to make it

  • Preheat oven to 350.
  • Pat fish dry with paper towels then sprinkle with salt and pepper and place in baking dish.
  • Sprinkle with lemon peel and chives then dot with butter.
  • Bake 12 minutes.
  • While fish bakes put 1/2" oil in small saucepan set over high heat.
  • Pat capers dry with paper towels.
  • Add capers to hot oil and cook 2 minutes.
  • Immediately remove with a slotted spoon to paper towels.
  • Place fish on warm plates then divide cooking juices among them.
  • Sprinkle with capers then serve immediately.
