SALMON WITH FRIED CAPERS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Sexton Estate in Addison, Texas in 1986.

Ingredients
  • 4 salmon steaks
  • 1/2 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons grated lemon peel
  • 3 tablespoons minced chives
  • 5 tablespoons butter
  • Vegetable oil
  • 2 tablespoons capers

Directions
  1. Preheat oven to 350.
  2. Pat fish dry with paper towels then sprinkle with salt and pepper and place in baking dish.
  3. Sprinkle with lemon peel and chives then dot with butter.
  4. Bake 12 minutes.
  5. While fish bakes put 1/2" oil in small saucepan set over high heat.
  6. Pat capers dry with paper towels.
  7. Add capers to hot oil and cook 2 minutes.
  8. Immediately remove with a slotted spoon to paper towels.
  9. Place fish on warm plates then divide cooking juices among them.
  10. Sprinkle with capers then serve immediately.
