How to make it

  • Using electric blender puree peas with liquid until very smooth.
  • Heat pea puree in medium saucepan then add butter, salt and pepper.
  • Stir until butter melts.
  • Add bouillon and sherry then heat just to boiling point.
  • Ladle soup into serving cups and top with plain whipped cream.
  • If desired quickly place cups under the broiler to lightly brown the cream.
