This one comes from a Women's Health magazine that I received a couple of years ago. Great on the first night as the main dish, this also has some great leftover possibilities.

Ingredients
  • 1 lb. extra-lean ground turkey
  • 2 egg whites (or one whole egg if you aren't watching your fat too closely.)
  • 1/2 C. prepared plain bread crumbs
  • 1/2 C. grated carrots
  • 1/4 C. grated zucchini
  • 2 tsp. Worcestershire sauce
  • 1 tsp. dried sweet basil
  • 1 tsp. dried oregano leaves
  • 1 tsp. Italian seasoning
  • 1 tsp. garlic powder
  • 1 tsp. salt
  • olive oil spray

Directions
  1. Preheat oven to 375 degrees F.
  2. Spray a standard loaf pan with cooking spray.
  3. In a large bowl, mix all ingredients except spray.
  4. Press mixture into prepared pan.
  5. Bake for 35-40 minutes or until internal temp. read 170 degrees F.
  6. Let stand for 10 minutes, then slice into 10 equal slices.
  7. Note: I usually serve this with pan fried zucchini to use up the remainder and 1/2 a baked potato with salsa.
