How to make it

  • Boil potato until soft and can easily be mash.
  • Mash potato and add cheese, mix until well combined.
  • Take a spoonful of mashed potato, dredge with flour, dip in egg, roll in mixture of breadcrumbs & nuts, and deep fry in hot oil.
  • When browned, remove in oil and pat dry in paper towels. Do the same with other croquets.
  • For sauce just mix all ingredients thoroughly and let rest in chiller for at least 20min to blend flavors. If you want less spicyness, lessen the amount of red chili.

    I think I've had something like this in an Italian or French restaurant, but without the nuts. Delish!
