How to make it

  • Mix dry ingredients, add remaining. Batter should be lumpy.
  • Fill greased (I use cooking spray) muffin cups 2/3 full with batter.
  • Bake at 400F for 20 minutes or until golden brown.

    I made these this evening. They turned out gorgeous.
    I used a large muffin tray and got 6 muffins. There was a wee bit of batter left but not enough to do a 7th.
    So sad because they were perfect muffins. I did gild the lily a bit and made a simple vanilla sugar glaze to top them off.
