Thai Pork Satay Recipe
THAI PORK SATAY This recipe came from an estate sale. I obtained it when I purchased the family collection from the Boyd Estate in Dallas, Texas in 1987.

Ingredients
  • 1 tablespoon curry powder
  • 1 teaspoon turmeric
  • 1 tablespoon brown sugar
  • 2 tablespoons fish sauce
  • 2 tablespoons lime juice
  • 1 tablespoon vegetable oil
  • 1 pound boneless pork loin
  • 1/2 cup thick coconut cream
  • 1 can unsweetened coconut milk
  • Spicy peanut sauce:
  • 1 cup smooth peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon sugar
  • 2 tablespoons rice wine
  • 1-1/2 tablespoons Chinese vinegar
  • 1/4 cup sesame oil
  • 1 clove garlic minced
  • 1 tablespoon minced ginger
  • 1 teaspoon chili paste
  • 3 tablespoons chicken broth

Directions
  1. Cut pork into 3" by 1/4" strips.
  2. Combine curry powder, turmeric, sugar, fish sauce, lime juice and oil.
  3. Toss pork strips with marinade then thread 4 pork strips onto skewers, weaving ribbon fashion.
  4. Marinate 30 minutes or longer then preheat grill.
  5. Brush strips with thick coconut cream and place brushed side down over hot coals.
  6. Cool for 2 minutes then turn over brush with additional cream and grill until cooked through.
  7. Serve with spicy peanut sauce.
  8. To prepare coconut milk and cream pour 1 can unsweetened coconut milk into a tall glass.
  9. Allow to sit at least 1 hour so the thick cream rises to the top.
  10. Skim off top and set aside.
  11. To make sauce blend all ingredients until smooth.
