LAMB WITH SPINACH This recipe came from an estate sale. I obtained it when I purchased the family collection from the Boyd Estate in Dallas, Texas in 1987.

Ingredients
  • 2-1/2 pounds lamb stew meat preferably leg
  • 1/3 cup olive oil
  • 3/4 pound onions largely diced
  • 4 teaspoons chopped garlic
  • 2 teaspoons turmeric
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ground cardamom
  • 1 teaspoon crushed red pepper
  • 1/2 teaspoon cinnamon
  • 32 ounce can tomatoes drained and chopped
  • 1 cup beef stock
  • 1/3 pound fresh spinach washed and well drained
  • 1/2 cup yogurt
  • 1 tablespoon grated lemon peel
  • 1/2 teaspoon salt
  • 1/4 cup pine nuts roasted

Directions
  1. Sear lamb in olive oil in a cast iron skillet.
  2. Add onions and sauté 2 minutes then add garlic and sauté 1 minute longer.
  3. Put in the turmeric, nutmeg, cardamom, crushed red pepper and cinnamon.
  4. Sauté 2 minutes more being careful not to burn the onions or garlic.
  5. Add tomatoes and stock then stir well.
  6. Cover dish and bake at 350 for 1 hour.
  7. Remove from oven and add spinach stirring until spinach is wilted and blended in.
  8. Allow stew to cool slightly then add yogurt, lemon peel and salt.
  9. Sprinkle with roasted pine nuts then serve immediately.
