Smoked Salmon Cheesecake

- 3 8oz. packages of cream cheese, softened shopping list
- 5 eggs shopping list
- 1 pint of sour cream shopping list
- 1 small onion, minced finely shopping list
- 1/2 - 1 cup capers (optional) shopping list
- 1/4 lb. smoked salmon, diced (save 2 or 3 strips to make roses for shopping list
- decorating the top) shopping list
- small leafed parsley for garnish shopping list
How to make it
- Preheat oven to 325.
- Put cream cheese in mixer or Cuisinart and whip.
- Add eggs one at a time, allowing each one to blend before adding the next.
- Lower speed and add sour cream, onions (raw, sauteed, or softened in microwave) and diced salmon.
- Place in spring form pan and bake for about an hour.
- Garnish with smoked salmon roses with a sprig of parsley tucked under each rose.
