Rajin Crockpot Pork Loin

- Alter these ingredients however you want, with whatever looks good from your pantry. shopping list
- 1 pork loin (mine pretty much filled a large crock pot) shopping list
- 1 small can chipotle peppers in adobo sauce (whole - do not dice) (see directions below) shopping list
- 1 can diced tomotoes (would have used 2 cans if I'd had them) shopping list
- 1-2 Tablespoon(s) minced garlic (we LOVE garlic) shopping list
- 1 large onion, quartered shopping list
- 2 cups water (I would have used beef broth if I had had any in the pantry) shopping list
- 2 Tablespoons worcestershire sauce shopping list
How to make it
- Believe it or not, I threw in one FROZEN pork loin and the rest of the ingredients. Turned the crock pot on low. Put the lid on, walked out the front door and came home to a fork tender pork roast that was so good I didn't even want to wait to put it on a plate.
- One caveat - the pork loin was VERY spicy - probably too spicy for most people. I would probably use only HALF the can of chipotles in adobo and maybe only a quarter if you can't handle much spice at all. But do use the sauce - that's what gives it the smokey flavor!)
