How to make it

  • In a small saucepan heat 2 tbsp oil
  • Add onions and cook over low heat for 3 minutes
  • Stir in curry powder and salt and cook an additonal 30 seconds
  • Remove mixture from heat and let it cool
  • Stir in yogurt, lemon juice and mustard
  • Put chicken in a serving bowl add curry mixture, the remaining 2 tbsp oil and celery
  • Toss to mix
  • Add grapes and toss again gently
  • Chill salad
  • Serve on lettuce leaves
