Spicy Ginger Marmalade Recipe
A low sugar, very gingery topping for anything you like! Makes about 5 cups, 2 tbsp per serving

Ingredients
  • 1 1/2 cups lightly packed grated fresh ginger
  • 6 cups water
  • 1/4 cup fresh lemon juice
  • 1/4 cup brown sugar
  • 1 pouch (3 ounces) liquid pectin

Directions
  1. Combine the grated ginger, its juice and water in a saucepan.
  2. Bring the mixture to a boil, lower the heat, and simmer, covered, until the shreds are very tender and almost translucent, about 1 1/4 hours.
  3. Remove from the heat.
  4. Measure three cups of ginger and cooking liquid. (If you have more than 3 cups, spoon off the surplus liquid... you can use it to make home made ginger ale).
  5. Add lemon juice and sugar to the ginger in the pan, bring mixture to a hard boil for 1 minute.
  6. Add pectin, and bring mixture to a hard boil again for 2 minutes.
  7. Cool 5 minutes, stirring, then ladle it into sterilized canning jars, leaving about 1/4 inch of headspace.
  8. Seal and process the jars for 15 minutes in a boiling-water bath.
  9. Cool, label, and store the jars.
