Sausage Bruschetta

- 6 hot sausage, raw, diced as small as you can cut, Buy your favourite sausage. shopping list
- 1 large baguette, cut in rounds shopping list
- 3 cloves of roasted garlic, mashed or diced shopping list
- 1/2 bunch green onion, finely diced shopping list
- 2 tbsp olive oil shopping list
- 1 roasted red pepper, finely diced shopping list
- 1 tbsp red wine vinegar shopping list
- salt and pepper to taste shopping list
- 1 sprig Fresh thyme shopping list
- 2 tomato, large, finely diced shopping list
- 1 cup red wine shopping list
- 1 pint fresh or frozen raspberries shopping list
- 1 tsp Chipotle paste shopping list
- Fresh Parmesan or pecorino cheese shopping list
How to make it
- Dice all your vegetables and sausage.
- Heat a pot with oilat medium high temperature,
- Add sausage and brown, always stirring the meat for about 5 minutes.
- Add garlic and all veg. Sautee for 2 minutes.
- Add vinegar, chipotle, red wine, thyme, salt and pepper, raspberries, reduce the heat and simmer for 5 minutes.
- Add tomatoes and simmer for another 2 minutes.
- Brush your cut baguette rounds with oil, flavoured oil if you have any and place in the oven til they are toasted golden brown.
- Once the baguette is toasted, top them liberally with the mix and then grate fresh cheese on top.
