Lemon Garlic Roasted Pork And Vegetables Recipe

Ingredients
  • Pork
  • 2 to 3 pork tenderloins, about 1 1/2 lbs
  • 1 clove of garlic ,minced (or to taste)
  • 1 tsp lemon pepper seasoning
  • Vegetables
  • 1 (19 or 20 oz) bag of frozen roasted potatoes with garlic and herbs, thawed
  • 3 C frozen broccoli, carrots a nd cauliflower (from a 1 lb bag), thawed
  • 2 tsp lemon juice

Directions
  1. Heat oven to 450F Spray a 9 x 13 pan with cooking spray
  2. Place pork in pan
  3. In a small bowl mix garlic and lemon pepper seasoning and rub over pork
  4. In an ungreased casserole mix all ingredients, except lemon juice; cover
  5. Bake pork and vegetables 30 to 40 minutes or until internal temperature of pork is 160F and vegetables are tender.
  6. If vegetalbes are done before pork, remove from oven.
  7. Stir lemon juice into vegetables before serving
  8. Note: thaw frozen vegetables in refrigerator for about 8 hours in advance of making
