Lemon garlic Roasted Pork and Vegetables

- pork shopping list
- 2 to 3 pork tenderloins, about 1 1/2 lbs shopping list
- 1 clove of garlic ,minced (or to taste) shopping list
- 1 tsp lemon pepper seasoning shopping list
- vegetables shopping list
- 1 (19 or 20 oz) bag of frozen roasted potatoes with garlic and herbs, thawed shopping list
- 3 C frozen broccoli, carrots a nd cauliflower (from a 1 lb bag), thawed shopping list
- 2 tsp lemon juice shopping list
How to make it
- Heat oven to 450F Spray a 9 x 13 pan with cooking spray
- Place pork in pan
- In a small bowl mix garlic and lemon pepper seasoning and rub over pork
- In an ungreased casserole mix all ingredients, except lemon juice; cover
- Bake pork and vegetables 30 to 40 minutes or until internal temperature of pork is 160F and vegetables are tender.
- If vegetalbes are done before pork, remove from oven.
- Stir lemon juice into vegetables before serving
- Note: thaw frozen vegetables in refrigerator for about 8 hours in advance of making
