How to make it

  • Combine crushed cookies ,1 tablespoon sugar,and melted butter.
  • Press into a lightly greased 9" springform pan. Set aside(no need to bake it).
  • In a large mixing bowl,beat cream cheese until smooth.
  • Add vanilla and 1 cup sugar and continue beating.
  • Add eggs one at a time,beating well after each addition.
  • Add sour cream and melted chocolate. Beat until well combined and smooth.
  • Pour filling into prepared crust.
  • Bake at 450 degrees for 10 minutes. Then turn oven down to 300 and bake for 1 hour. Do not open oven door.
  • Turn oven off and let cheesecake cool completely(at least 3 hours) before removing it.
  • Refrigerate until cold.
  • Glaze:
  • In a small saucepan over medium low heat,melt the butter and chocolate.
  • Add water and vanilla extract. Stir until blended.
  • Add sugar. Whisk until smooth.
  • Pour over cheesecake. Refrigerate until set.
  • Note:
  • Waterbath is optional. I've always gotten around it by setting a large pan of water on the rack below the cheesecake.

    Holy Moley!! I made this for desert last night and WOW!!! rich and awesome, very large too I fed 7 of us and there is still half left! will definately be making this one again!!
