Halibut Parmesan Recipe
We've had different versions of this dish at various seafood restaurants and my husband says mine is his favorite.....much to my delight.

Ingredients
  • 1 Cup grated parmesan (such as Kraft)
  • 1 Large Halibut fillet (Steaks do not work well)
  • 2 Large eggs
  • 1 Tbsp milk
  • 3 Tbsp. Olive oil
  • 2 Tbsp. Freshly grated parmesan

Directions
  1. Preheat a frying pan at med-med high heat, add olive oil.
  2. Cut your halibut fillet into 4 equal portions. If your fillet is extra thick, slice horizontally, as the crust will be done way before the middle of the fish. Trust me, I've learned the hard way!
  3. Crack both eggs into a dish such as a pie plate or anything with at least a 2 inch lip and add milk, whisk.
  4. Place parmesan into another dish, (such as a pie plate).
  5. Take one of your halibut portions and coat evenly in your egg wash.
  6. Next coat evenly in parmesan.
  7. Put into frying pan and let brown a deep golden brown and then flip and do the same on the other side. Cooking time will vary with different cooktops.
  8. During the last few minutes of cooking the last side, divide evenly the fresh grated parmesan over the tops of each fish portion so that it can melt.
  9. Serve with basmati rice and/or veggies.
