How to make it

  • Pierce the potatoes with a fork, and bake at 350-degrees for one hour and 20 minutes.
  • Cut each potato in half, lengthwise and scoop out the pulp.
  • Mash the pulp in a bowl with the Ricotta, chives, garlic and 1 cup of the Cheddar.
  • Spoon this mixture back into the potato shells, piling it up nicely.
  • Place the filled shells on a LIGHTLY greased baking sheet, and bake at 350-degrees for 15 to 20 minutes.
  • Sprinkle with the remaining Cheddar, and bake 10 minutes more.
  • Sprinkle with paprika to taste and for color.
