Marinated Vermicelli Salad Recipe
A delicious salad that I found a long time ago on the internet. It's a favorite of mine to take on outings during warm weather as it doesn't contain mayonnaise. It has a 4 hour chill time that is not reflected in the prep time.

Ingredients
  • 8 oz. uncooked vermicelli
  • 1 medium tomato, chopped
  • 1 medium cucumber, chopped
  • ½ c. chopped green bell pepper
  • 1 (4oz) can sliced ripe olives, drained
  • ¼ c. chopped red onion
  • 2 TB salad supreme seasoning
  • ½ c. home-made or purchased zesty Italian salad dressing

Directions
  1. Cook vermicelli according to package directions until al dente. In a large bowl, combine all remaining ingredients except salad dressing. Drain vermicelli, rinse with cold water to cool. Add vermicelli and salad dressing to salad; toss gently to mix. Refrigerate at least 4 hours or overnight to blend flavors.
